fluffy wholewheat waffles

Being 100% wholewheat doesn’t hold these babies back at all–they’re wonderfully light, and pretty simple to make too. Try serving your fluffy wholewheat waffles with a no-sugar-added fruit compote or some sugar-free syrup! Who doesn’t love waffles on the weekend, really?

Note: You will likely want an electric mixer for this recipe. Handheld or stand will work fine.

ingredients:

Makes about 9 waffles, depending on the volume of your waffle maker. Serving size: 3 waffles.

  • 1 cup whole wheat flour
  • 1 cup white whole wheat flour (you can also just use 2 cups whole wheat if you aren’t able to find white whole wheat flour)
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 2 cups orange or apple juice (use 100% juice)
  • 2 tsp pure vanilla extract
  • 2 eggs
  • 1/8 tsp cream of tartar

to prepare:

First, separate the eggs. In a medium-large bowl, whisk together the dry ingredients. In a separate medium bowl, combine the egg whites and cream of tartar. Beat with an electric mixer until you get stiff peaks.

Once that step is done, grab the bowl with the dry ingredients and add to it the apple or orange juice, vanilla extract, and egg yolks, and then whisk just enough to make a smooth mixture. Finally, scrape in the fluffy egg whites and fold gently until mostly combined (streaks are ok).

Lightly coat a preheated waffle maker with cooking spray and fill it about 1/2 full with batter. Cook until crisp and golden (5-6 minutes). Continue with the rest of the batter. You can keep the cooked waffles warm by setting your oven to the Warm setting (or a very low temp) and adding the finished fluffy wholewheat waffles to a baking tray covered with a piece of aluminum foil.
